As far as I'm aware there is no other way apart from mining, not until we get Extrabees or EE3. I'm not sure but maybe using a Pick with a fortune enchant may grant more, never tried it myself but worth a shot.

If you use a silk touch pick or rockcutter on the ore, you can macerate it into two dusts, which, when centrifuged, gives slightly more materials. That is (afaik) the most efficient result.

To clarify, Fortune does not get you any extra uranium. It doesn't seem to work on any ores/gems added by mods, as far as I can tell. Silk Touch/rockcutter is the way to go. And mining's the only way I know to get it too ...

the best ways I know to get extra uranium does require mining.
if you have gregtech enabled, silk touch the ore and macerate it, as Hrulgin mentioned, or if you don't have gregtech enabled, and have a dense ore symbol, make a dense ore age where you can find plenty of uranium
though I do warn, if you do use a dense ore age the game may become a tad boring, because of the massive amounts of ores.

Or just mine for a bit they're only half the rarity of diamonds and for those solar panels you don't needs a whole bunch only when going nuclear you'll needs a lot. Nuclear power is so under powered since you can't cools the reactors other than stupid vents and coolant cells. No more 90% filled reactors with ice to cools them down to 300 heat and heat doesn't even decay over time so dry cooling is out. So I see no point going nuclear for the cost of components and fuel to power it.
