(noob question) setting up a server

Sorry for being such a noob. I play with 2 other people so use a cheap server. so far i've only been using modpacks my host has pre-set installs for in their control panel, but their list is a bit out of date and most are 2-3 versions old. If i want to use the latest version of one of these or a pack they don't have, do i just upload the mods/config folder from the client or is there anything else i need to do?

edit: and make sure right forge version too i expect.
edit2: should point out i have FTP access, but not shell.

You could try and first start the server on your local machine and then upload all the files (remove the old ones at the host and only save your world if you have one.

If you need any further help I would suggest you reach out to your hoster.
