Is it ok to run two or more quarrys?

Sure, unless there is some server specific rule against it or something. I'm currently running four without problems (quick to set up from one spot).

If your processing and and sorting system can handle it sure!!! why not, at one point in 1.2.5 I needed a 16x16 chunk dug to bedrock so I could build a perfect darkroom spawner so I had 19 quarries running at once!!!

It should not cause corruption to saves. Each Quarry does act as a chunkloader, which does increase the amount of processing power used, dependent on the size of the quarry. Even large quarries are only about equivalent to a single player in server load, though, so it shouldn't be too bad unless your computer is already having problems (or you quarry for all the lighting updates).

You dont state if its on a server or off line, if on a server just take a sec to make sure there is no chance of any form of spillage, (NOT ANY CHANCE AT ALL), consider what could happen if xx storage gets full or if the power stops, I know in 99% of cases it fine, but really you would be shocked to find out how many players that should know better get caught out, & if you have a buddy ask to swing by & check now n then while your off line, remember too that if there is ever an issue the admin will just delete any & all offending machines, for warned for armed.

Personally I turn my systems off when I log out.

In terms of game mechanics, yes, you can run as many quarries as you like. Note that the quarry acts as a chunk loader and will keep the chunks it mines loaded until it is completed. If you're on a server, you may want to check with the server owner if the system can handle the load. If you're in single player, as long as you don't notice any drop in performance, you're OK.
