If I was to install my own mods, and then I updated the modpack, would that overwrite or mess with the mods I installed? For example, if I installed Mo creatures now, and then a week later, RP2 arrived. I then accepted the update to the mod pack. Would that mess with my Mo creatures install?

That all depend on the Block Id's used by the mods and if say Mo creatures adds any blocks (i.e machines) then It MAY conflict with a new mod in the pack.
General rule of thumb: whenever one thing updates, look for updates elsewhere. If no updates, then, of course, don't update
