They're pumping water into the pipes. How do I separate it without losing the oil?

For ocean oil wells, build an underwater shaft around the central well, or else the pump will pump the entire ocean dry before advancing down deeper.

For filterig liquid in pipes, have the same pipe connect to two tanks. In one tank, put some water, in the other tank, put some oil. Since a tank can only hold one type of liquid, the contents of the pipe will "sort" themselves into the proper tank, and you can then pump pure liquid out of that tank. Be careful though to never completely empty either tank.

Just checked 3 ocean wells I had and they don't go below the ocean floor. So I abandoned those. But there's a problem with using tanks: if the pump hits oil, it'll fill the next empty tank up. i.e.: if I use 4 tanks (2 each for water and oil) and one tank is filled with water, then if oil is pumped, it'll choose between the empty tanks.

You can't see oil underwater because oil is, for all intents and purposes, water in Minecraft. It's just recolored and made finite (sourceblocks don't replicate themselves like water does).

It's the same with water and ice, actually. Look through ice, and you can't see any water behind it. Look through water, and ice behind it is invisible.

If you dive down to the ocean floor just below the oil spout, there should be a hole there from where the oil comes. The problem is seeing it, since it is very dark down there most of the time. So I'd build some jack-o-lanterns (pumpkin + torch) to light up the oceanfloor. An IC2 scuba helmet and some compressed air cells will keep you from drowning (but watch your supply).

To build oil platform you don't need to dive. Just use lily pad and some sand to make a shaft and you won't have problem with water.
