my issue is on 10 render distance, I get about half a second of normal performance and it freezes for a second or 2, then smooth for half a sec, and repeats.
Major stuttering issues with this,

GTX 1080,
Intel I7 8700
16 gigs ram, (3-4 gb's allocated at the time of testing)
resolution 1920x1080 (duno if resolution would help)

and im getting these issues.
Any advice on why minecraft is the hardest game to run on my pc like this?

Try allocating more ram to the launcher. My friends and I have allocated about 6-8gbs each, with some going even higher.
