Easy Question

I'm new to having my own server, and I'm sure this is an easy question, but I don't even really know how to find the answer, so if you could help, or just point me in the right direction, I'd really appreciate it.

I want to have EE2 in my Ultimate server, which I know how to do, but I want to remove certain items, like the Condenser and Transumtation Tablet.
How do I go about removing specific items from the game?

First of all, EE2 is discontinued, use EE3 instead (Most EE2 has been removed from it), You can download the server files from the FTB Launcher, there is an obvious "Download Server" button, once you click it and download the files, you can run the batch file, but read some information regarding those batch files(to assign memory and such) if you want to disable certain items from your server, use MCPC+ or BukkitForge with TekkitCustomizer plugin (works for FTB too!) and there is tons of tutorials on how to get your server up and running.

Yeah I already have had the server going for months, just haven't modified it at all. Also, I know EE2 is discontinued, and EE3 is in ultimate, but EE3 doesn't have things like the Eye of Mercurial, which is awesome for building large projects (among other cools power items). That's why I want to add EE2, even though I'll keep EE3.
Thanks for the MCPC+, Bukkitforge, and TekkitCustomizer plugin idea, I'll definitely get right on those. Appreciate the help!

Pahimar, the maintainer of EE2 and the creator of EE3 said he'll add some new toys later on, but for now, here is a simple replacement for Eye of Mercurial:
Thaumcraft's Shovel of the Earthmover + Wand of Equal Trade
Well, the combination will allow you to build 3x3 platforms, that can be transmuted into any material, I don't know if it works to build walls, but if that's not enough, you can get the WorldEdit plugin for bukkit, of course you have to use MCPC+ or BukkitForge to use the plugin in a forge server.

you'll find there are many replacements for most of EE 2's items. The main difference is that it will be significantly harder to get them in FTB. There is no EE 2 for 1.4.7, the last version was 1.2.5 so your never going to get it to work with the pack. Have a look at the mod Extra Utilities, it's got some good tools in it you might like however it is only for 1.5.x so you will need to get the beta pack to use it
