Carpenter's blocks have some other functionality beyond the shapes (and it does a lot more than wedges and whatnot. If you hold shift while scrolling, there's a bunch of shapes you can quickly and easily switch to and from).
It also has the ability to sprinkle a little glowstone dust to make it a light source. It can add additional layers of textures. It can fill in blank spaces with water if you place things like stairs and fences near water sources.
But the big thing for me with it was that you can just take a bunch of the blocks with you on a build and put the right shapes down as you go along. You don't have to permanently cut the blocks into the shapes you want before you build. You can experiment as you go.
I'm sure architecturecraft is vastly superior in many ways, but there's some benefit to kickin' it old school
