Additionally, if you want to change how large an area you quarry out, you use landmarks - actually, that was always how you did it.
I think you set them up in a rectangle, then right click the landmarks to make the beams turn red...? I've never done it before.
Oh, and place the quarry next to that rectangle, not on or inside it - you'll regret it otherwise.
