Sound like something isn't keeping up correctly. Do you have root level access to the server? If so my 1st recommendation would be to update java. The server crash log you posted say a very old version of Java 7 64 bit is being used.

I would also like to know more about the servers specifications. I see 4 GB in the java arguments, but how much is left for the OS? Also, what speed is the CPU?

Default memory for the pack was if I remember correctly 1 gig or something which seemed a little bit on the small side so I increased it. It is my own server. The hardware is:

Intel i7 870 @ 2.93 GHz
16 Gig ram @ 1333 MHz
Internet is a dedicated 100/100 Fiber connection
HD Western Digital 1TB SATA

The server is running Ubuntu server 64-bit. Services are Teamspeak 3, and minecraft. Thats it, nothing else.

Have been running a lot of other minecraft packs in the past without problem, I seriously doubt the performance of the server is the problem, however you have a really good point about the old Java version. I will try and update that and see if it fixes the issue.

Yes those sever specs do look good. I've heard of a lot of slowness issues with the some of the pack updates for Infinity. I'm wondering if it is related. My server is still 1.6.2 version of the pack. I never updated past that due to the biome ID issue between Thaumic Horizon's and BOP.

As for services I do have 3 packs (each is a separate service), TeamSpeak, Dropbox. cron & SSH. Dropbox is used for backup of my worlds (every 8 hours).

If you are interested in the specs looks at the link in my sig for my server.
