    I plan to make a server download for the next update, which should be less than a week or 2 away. Really though it's just take a few client only mods out of the mod directory and it will be done.

    It should be find on the server to use JAVA 8, since the server doesn't do any rendering and all the issues with JAVA 8 are related to rendering APIs. Should also be fine to stay with JAVA 7 since it runs the new update perfectly fine as far as I can tell.

    All I know is that when I and my friends updated to Java 1.8 we had the same rendering issues. There was also some crashing problems. As soon I went back to Java 1.7 render issues were gone and crashes stopped.
