Um, that's not even close to how "vinilla" maps work. You'd be surprised what command blocks can do. The only maps that are like that, with the signs, are bad ones that you probably shouldn't play. Those... those are just parkour maps.

When I first started playing Minecraft modded, crash reports looked like a gigantic garbled mess of code. I can understand them ok now, but back then the single crash report I understood was saying that I can't combine this water mod with this other water mod because both have a mob named "Fishy".
