I dig a hole in a cliff, then just expand up, down, and back as I need space. I try to make it as nice-looking and organized as possible; e.g. no exposed stone, easy to find your way around, looks good from outside, etc. I usually start with IC2 from habit (I used to play a ton of Tekkit) then...

Since we are now in 1.8 (apparently), I use command blocks to cover the hill in sand, suffocating you. Then I remove the sand and your barriers with command blocks and build a steampunk castle on top of the hill. My hill again :)

The tower is built out of a lot of small towers stuck together, so just focus on clearing out and lighting up the castle one room at a time. Then maybe go around and fix everything up so it looks more homely :)

After drinking a potion of strength I smite Slowking over the head with my warhammer so hard that he is forced into the ground and permenantly becomes part of the hill. Sorry slowking :) My hill.
