Yeah I'm using the yellow ones. I'm doing exactly what is said in his latest video. Everybody in the video comments is saying that it's something having to do with the mod version and that the version in the video is different from the Direpack video.. But there's no downloads for it online.

I'd say you're safest way to find emeralds would be to either create a villager sorting system to get reasonable trades or find an Extreme Hills Mystcraft page to make a world devoted to emeralds.

Height really doesn't matter to me. Obviously if it's in a mountain it's gonna be above sea level. It can all be on that level or it could have multiple floors.
