There is a Modpack out called Farming Valley, available on the Curse Launcher. Very similar to what you are proposing. I am not mentioning this to devalue what you are proposing, but just something for you to look at.
As far as I know Welsknight is not updating this pack anymore, you could look at his YouTube channel and see if he mentions anything about making a server for it. You will have to search, as he has done nothing with this pack for quite some time.

You are already looking at the one I would have chosen, the only other one I can suggest is Tolkiencraft 2. It is a huge pack with a map built in. Though you have to download the map separately as it is quite huge.
I can help with the Botania question. Vazkii changed how passive flower and mana worked. Those two flowers and the hydrangea now only last a certain period of time and then die off, so they are behaving properly and its not a bug.
I was just going thru the quest based modpacks on CurseLauncher and found it by accident. I played Runescape for 10yrs so it really appealed to me. I don't use the FTB Launcher, so I don't know if it is on there.
If you ever played Runescape and want a nostalgic look back at it.. there is a Modpack called Minescape available on the Curse Launcher. It has HQM and Twilight Forest.
I agree with the above poster, Thaumcraft is a very complex and involved Mod. I would suggest either watch Direwolf20 or Haighyorkie, both of these guys have done very involved Mod Spotlights for Thaumcraft.
