Minecraft does not support multi threading and laptops are generally not geared for any serious gaming. Taking these two factors in account, your results should be expected.

Carrots are easy to maintain. Make a decent sized field and wait. Once you harvest remember to replant right away. You should end out with a stack+ for eating (If not, make your farm bigger) By the time you are through with your stack of carrots, the field should be ready to harvest once again.

You should try combining Factorization with Thaumcraft. Use the golems to work all of the machines. It's a nice way to triple your ores and it's awesome to just look at all your minions working. ;)

A bit off topic, but if you were looking for tutorials on using NEI, not much point in watching one for TMI. They have a lot of the same functions, but there are still some parts which may end up confusing you more than it helps.
