FTB infinity is the biggest most up to date modpack on the FTB launcher. I myself play infinity with minecraft comes alive, custom npcs, flans mod, jurassicraft, and some others.

I personally disabled MCA override to villages and just used the orb to get the mca village and if you are using a server, just cheat for a couple male eggs, female eggs, and a couple guard eggs. As far as getting them without cheating, I don't really know.

I was wrong. The emerald that I found was from a mystery bag I opened. I searched through all the caves down there forever and there are no emeralds in the extreme hills.

I am using version 2.1.3 of infinity because I'm too lazy to update it. But I don't know if that matters. Still looking into what could cause it.

Nope I am sending everything I get through a tesseract and into TE caches, deep storage units, and chests. I am getting everything but emeralds.
