The reason it doesn't work is because by default it is using Java 1.7
Minecraft currently is only compatible with java 1.6 on mac.
Open Terminal and run this command
open /usr/share/java/Tools/Jar\ Bundler.app/
Now package the app and specify java version 1.6*
Problem solved ;)...
