It's all about the individual core speed (3.5ghz and up should give you decent performance), ram (16 recommended) and nvidia graphics card (not AMD as they are more likely to have issues with shaders). That's all you need for Minecraft.

I'm playing 413 modded Minecraft with my i7-7700HQ. That processor is way better than mine, so i7-8700 is enough for modded. But don't forget having at least 16 GB RAM.

That processor is perfectly fine. You will experience no problems with the heaviest modded packs as long as you can devote 6-9gb ram to MC.

Yeah, as Reddis said, don't worry, just make sure you have enough ram. 8GB+ ram would be nice but the best would be if you'd have 16gb

EDIT: I mean why not, especially for the multitasker.

the i7-8700 is really good for playing any game really. If your worried about processor speed the i7-8700 is enough to run minecraft, just need enough RAM to run all of the mods, then you're fine. AMD graphics cards also tend to have an issue with minecraft shaders, just an FYI

I'm playing perfectly fine on my system:
Ryzen 5 1600 (3.2-3.5Ghz, although mine self-OCs to 3.775Ghz)
16Gb DDR4-3000 Ram
ASUS Prime X370-Pro Motherboard
Samsung 960 EVO NVMe SSD, 240GB (Boot drive)
4TB "Spinning Rust" Drive
GTX1060 w/6GB ram

If I set no limit on FPS I generally see over 200 FPS, otherwise default locks at 120

I'm certain I can just drop a Ryzen 5 3600 into the existing system and see a decent Speed increase (faster base/boost clock, improved IPS on the 3000 series)

[Edit] I just noticed this in a post above and it makes a difference... My Render distance is never set to less than 16, usually to 24. Also, My other settings are set to highest quality, and my Heap allocation is set to approximately 7.5 GB.
