Everywhere that I've looked, descriptions on how to automate the Pam's Harvestcraft Presser (turning soybeans into silken tofu and bat, etc) mention that input items can be piped into any face of the machine and resulting (processed) items can be extracted from the bottom.

I'm running an Infinity Lite 1.10 (v1.6.0) server (and client machines), and if I attach an EnderIO item conduit or a Refined Storage Importer to the bottom of the presser machine block, they pull even the items from the top/input slot, so those items never have a chance to get processed. If set the conduit/importer to disabled and wait until the items are queued in the output spots, then activate the extraction, they pull the items from the output slots - as expected. So, it seems that extracting from the bottom just extracts anything that's in the machine instead of just the stuff intended for output.

Is this a bug or am I missing/overlooking something?

You could try filtering your extraction method to only extract the products, which would prevent them from extracting the input items as well.

I did think about that, but I was trying to make the machine multi-purpose (and on demand), by connecting a Refined Storage crafter to it, and loading the crafter with multiple patterns. Say I set the filter to extract silken tofu, grain bait, firm tofu, and soy milk, then load the recipe patterns for those items into the attached crafter. If I set the extracting method to pull those items, I still can't make firm tofu because making it involves inputting silken tofu, which would get extracted from the input spot. Granted, it's not a huge burden to create an additional, purpose-specific presser, crafter, and item conduit or importer (just for firm tofu), but that just seems like a bit of a wasteful way to do it - especially given that the machine's description states that the output items (only) are supposed to be able to be extracted from the bottom.
