the bottom 2 were made in creative, but you can easily switch them out of creative.
you could also use NBTexplorer to change a world into hardcore or back into survival.

Bumping this thread since I have a similar question. I just started trying out this pack yesterday and it seems like the hardcore elements of the pack are coming from the "Hardcore Questing Mod" rather then the map. Unfortunately disabling the mod itself also removes the quest functionality. Trying to disable the hardcore using the mod's own disable command returns permission denied (though one can just give themselves 255 lives).

What I have not been able to track down yet is what causes items to be deleted on death rather then dropped. Since I play without sound and with distractions, I kinda have to accept death as a part of my minecraft experience, so I would be interested in how to disable THAT bit of punishment.

You can always do /gamerule keepInventory true. Bit cheaty, but better then all your items just dissapearing.

cheats are default on in the agrarian skies maps. so no need to go into lan mode to enable cheats. also: the no items drop on death thing is a bug. for some reason I can't even recreate it on my install. there are others too whom it seems to work normally for.
