Optifine behaves weird with lava textures on machines/certain blocks. Disable it and u should be ok. The lag could be probably from item/fluiducts, but opis could help u pinpointing it

U might be looking at something along the lines of TPPI (test pack please ignore)?. From what i recall, its a ftb-comunity made private test, and it has a pretty nice setup and maintenance.

Well, if u want to manually fix the mob spawn, i think u would need a extra mod to control the spawn rates, like http://www.minecraftforum.net/topic/1909304-164forge-mob-spawn-controls-2-back-better-than-ever/ Or u could just set a magnum torch and prevent any mobs from spawning :p

I tend to look up to a sakura forest, or bambu forest since most of my buildings are japanese-themed, and a huge castle raising form the top of the bambu tops looks quite impressive If not, any forest would suffice
