    I had a look at the wiki and it said "when there are no targets, the Wither will sometimes shoot blue Wither Skulls, which move slower and can destroy any block besides bedrock".     I never knew they could, but I've been doing the obsidian room technique multiple times in my single player maps (and even some server maps) without any problems. Even if they can, you're still underground and the wither is still relatively contained.

Maybe try installing that patch as a server mod, and with such a small patch I doubt you'd need to install the same patch client-side.     If you install that patch as an extra mod (using the same method as Optifine), your game should stop crashing. I'm not 100% sure if that LivingSpecialSpawnEvent error is causing your problem with the game difficulty, but it might fix it.

    Good news, the first sugar cane farm is up. Each harvester will manage two levels (so 2x21x21 means each harvester manages 882 square blocks of sugarcane farmland), but for now I just made one to get things running. I'm planning to have at least 5 harvesters eventually.
